Best day EVER!



We got the chance to go snowboarding both days of this weekend!  It was an awesome time!!  Saturday was suppose to be a real stormy day, and our family's said we should stay home.  But boy are we glad that we didn't!  The roads and the resort were practically empty because of every ones fears of the weather, and we enjoyed one of the best days i have ever had snowboarding!!!!!!  The drive up, as well as the first few hours, were sunny, and then the storm came in.  We got some great riding in on some amazing powder with few others to compete with.

 The best rides we got from hiking over the top of the mountain and riding down the backside, so we did that over and over again.  Needless to say, we are really sore today!

From start to finish

Hello everyone, i hope that you had a great weekend!  I had posted this post  last week about a pecan pie i had made. Well i didn't include the recipe for the pie, so now i am!  We ended up picking some more pecans yesterday and i am going to be making another fresh pecan pie tonight, (they are so good)!  This time i got some photos of the whole process, from start to finish.  So those of you who have never got the chance to go in the field and pick some pecans, run them through a cracker, and then shell them to make a pie, you can see what your missing! 
 
First, you find a pecan tree, and for us that is at Aaron's mom's house.

 Next, you knock some off of the tree and then enjoy finding them scattered all over the ground.  (It is always fun to make that part into a game)!



We got some help from Aaron's mom's dog Mattie!

 Once you have a few buckets full you run them through a nut cracking machine to break their hard casing.


Here they are all cracked and ready to be shelled


I am skipping the next few steps because they are all in this post.  But here is the end result...




So, you need...
  • 1 cup light brown sugar
  • 1/4 cup white sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 tablespoon all-purpose flour
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

And it is as simple as this...

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Last add the milk, vanilla and nuts.
  3. Pour into an unbaked 9-in pie shell. Bake in preheated oven for 10 minutes at 400 degrees, then reduce temperature to 350 degrees and bake for 30 to 40 minutes, or until done.
  4. Enjoy your amazing pie!!!!

Pecan Pie...Yum!

Aaron's mom's house there are a few pecan trees, so this time every year we get the chance to have an abundance of fresh, right off the tree, pecans!!!  Aaron brought the first bunch home Tuesday, and yesterday he shelled them and I made a pie!  It was absolutely wonderful, (if i do say so myself), and the best part about it was that i followed a recipe for a more simple and natural version of the classic.  So with like five ingredients, none of which were corn syrup, the most delicious pie ever emerged!! 
Starting with the nuts straight off the tree...

Step three, put the pie together and bake it...

The finished product!  (We were so anxious to cut into it i forgot to take the photo first!)


You should give it a try sometime, soooo yummy!!
